In a bowl, combine the goat cheese with salt, pepper, extra virgin olive oil, and grated lemon zest. Set aside. Toast the bread in a nonstick pan with extra virgin olive oil until golden brown.

In a non-stick pan, toast the bread slices with a drizzle of extra virgin olive oil until golden and crispy.

Allow to cool slightly, then carefully spread the goat cheese prepared previously.
