Drain the chickpeas, rinse them thoroughly, and dry them carefully.

Season with salt, pepper, and spices to taste; smoked paprika is particularly good.

Then add two tablespoons of cornstarch and a drizzle of extra virgin olive oil and mix until the mixture is smooth.

Finally, spread the chickpeas on a baking tray and bake in a preheated fan oven at 200°C for about 25 minutes, until golden and crispy.
