    70 g
  • Cream
    30 g
  • Cornflour

Preparation

Phase 1:
Filling

Place the water, cream, pecorino, and cornflour in a small saucepan.

Use the NikolaTesla Switch Glow hob’s automatic Melting programme (or power level 2) to heat the mixture, stirring occasionally with a spoon until smooth.

Toast a generous grind of black pepper in a frying pan.
Phase 2:
Pasta

Fill a pot with water, bring it to a boil, and add salt. Add the pasta Artisia to the boiling water, turn the NikolaTesla Switch Glow hob down to power level 7, then set the timer for 13 minutes.

Once cooked, use a slotted spoon to carefully lift the pasta out of the water and transfer to a clean tea towel.

Use tongs to turn the cubes of pasta over on the tea towel for a few seconds to drain any excess water.
Phase 3:
Plating

Arrange the cubes on a serving dish and fill them ¾ full with the cream you made earlier, using a teaspoon or a piping bag.

Garnish with chopped walnuts and crispy speck.
