  • Cold water
    360 g
  • Oil

  • Salt
    12 g
  • Fresh brewer's yeast

Preparation

Mix all the ingredients except the salt in a bowl (or in a planetary mixer) (add it only after a rough dough has formed).

Place in a bowl lightly greased with oil, and leave to rise in the oven with the steam leavening program at 30°. After 1 hour, make some folds and repeat them after another hour.

Leave to rise until doubled.

Pass the dough over the semolina and spread it on the lightly oiled baking tray.
